Chicken, Lime and Coriander Bagel

A very simple but tasty low fat snack or lunch dish; that is easy to cook on the hob, oven, BBQ or in the BGE.


Chicken, lime and coriander bagel

Servings 2 people


  • 2 seeded bagel thins halved
  • 1 skinless chicken breast
  • 1/4 tsp oil or frylight
  • 50 g reduced fat soft cheese
  • 1 lime zest
  • 2 tsp fresh coriander chopped
  • 1 pinch Maldon salt
  • 1 pinch black pepper freshly ground
  • 1 handful fresh rocket


  1. Preheat the oven to 200 deg C or set up your BGE or BBQ to 350 deg F (175 deg C). 

  2. Brush the chicken with a little oil or spritz with frylight then season with salt and pepper. 

  3. Place the chicken in the oven (in a baking tin) for 30 minutes. If cooking on a BBQ or BGE, cook until it hits an internal temperature of at least 167 deg F (75 deg C). 

  4. Meanwhile, mix the soft cheese with the coriander, lime zest and a good grind of black pepper. 

  5. Toast the bagels lightly on each side and spread the bases with the cheese mixture then top each base with slices of the warm, cooked chicken.  

  6. Add a handful of rocket over the chicken and the bagel lids. 

  7. Serve while still warm.
