Club VIP Sandwich
The club sandwich traditionally consists of a grilled chicken sandwich married with a BLT.
This sandwich goes the extra mile!
Club VIP sandwich
- 4 chicken breasts
- 1 tbsp BBQ rub
- 4 rashers back bacon
- 200 g pulled pork
- 4 bread rolls
- 1 lettuce
- 1 tomato
- 1 tbsp mayo (per person)
- 4 slices processed cheese
Cover the chicken in the BBQ rub and flatten between 2 pieces of clingfilm, using a meat tenderiser or rolling pin.
On the BBQ, grill the chicken breast over the open flame.
If using a BGE, use the cast iron grill, point side up and cook direct at 150-205 deg C (300-400 deg F).
If cooking indoors, grill the chicken or cook on a hot griddle or frying pan.
Reheat some left over pulled pork for 20 minutes (steaming it in steamer bags works very well).
Grill the bacon and toast the buns (ideally on the BBQ).
Building the sandwich
When the chicken and bacon is cooked, and the pork reheated, it’s time to build.
Stack the sandwich as follows;
Cheese (processed cheese slices work surprisingly well, but a strong cheddar will also suit the flavours);
