Coffee Rub Lamb:

Now, this sounds like it should not work:

But stick with it, this is an amazing rub that brings out the flavour of the lamb.


Coffee rub lamb

Servings 2 people


  • 2 small lamb rumps
  • 2 tbsp ground coffee
  • ½ tsp ancho chilli powder
  • 1 tsp ground ginger
  • 1 tsp Maldon salt
  • 1 tsp smoked paprika
  • 1 tsp brown sugar
  • 1 tsp ground coriander
  • 1 tsp dry mustard
  • 1 tsp oregano
  • 1 tsp black pepper

To Serve

  • Mint sauce


  1. Score the lamb rumps with about 2cm deep cubes on the skin side. 

  2. Mix all the dry ingredients to form a rub (you will not need all the rub, but it will keep well for a few weeks in an air-tight container). 

  3. Cover the rumps in the rub, making sure to get the mixture into the scores. The meat is best when marinaded for a few hours, but it can be used immediately. 

  4. Set up the BGE for indirect at 176 deg C (350 deg F) and cook the lamb until it hits an internal temperature of 63 deg C to get it a perfect medium rare. If cooking indoors, cook in the oven at 180 deg C until the lamb is at your desired 'done-ness'. 

  5. Serve with mint sauce!
