Pineapple Masala

A hot sweet curry dish, that perfectly accompanies many meat dishes and only takes minutes to make.

 

Pineapple Masala

Ingredients

  • fresh pineapple
  • 1 tbsp ghee (or olive oil)
  • 1 tbsp soft brown sugar
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tbsp hot curry powder
  • ½ cup fresh coriander stems
  • 3 cloves garlic
  • 1 tbsp tomato purée
  • 120 ml water
  • 160 ml coconut cream (1 tin)
  • 1 handful coriander leaves

Instructions

  1. Heat the oil and the sugar in a large saucepan, then add the chunks of pineapple and all the ground spices (garam masala, ground coriander, turmeric, hot curry powder). 

  2. Gently heat through. 

  3. In a blender, blitz the coriander stems with the garlic and tomato purée. 

  4. Grate the creamed coconut. 

  5. Next add the coriander and garlic mixture to the pineapple, then add the water and coconut. 

  6. Stir and cook for 8-10 minutes, and at the last moment, stir in the chopped coriander leaves.
