Plum and Fig Brulee

A much healthier take on the classic Creme Brulee. An easy no bake creme, with a sweet fruit compote, and a crispy snappy toffee top. Perfect for those watching what they eat.


Plum and Fig Brulee

Servings 4 people


  • 2 fresh figs
  • 2 plums
  • 1 tbsp fresh cranberry or orange juice
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 250 g fat-free natural Greek yogurt
  • 1 tsp vanilla essence
  • 2 tbsp granulated sweetener
  • 4 tbsp caster sugar (level)


  1. Roughly chop the figs and plums. 

  2. Place in a pan with the fruit juice, cinnamon, coriander and 1 tbsp water. 

  3. Bring to the boil, reduce the heat and simmer for 5 minutes until syrupy. 

  4. Divide between 4 ramekins and leave to cool for 30 minutes.

  5. Mix the yogurt with the vanilla essence and artificial sweetener and spoon into the ramekins. 

  6. Level the surface. 

  7. Stand the ramekins on a baking sheet and dust with the caster sugar. 

  8. Place under a hot grill for 5 minutes or use a blow torch to melt the sugar until the top is caramelised and golden. 

  9. Don't be tempted to scrimp on the sugar here. It is easier to make a crisp snappy toffee top with more sugar than less. 

  10. Cool before serving.
