Scotch Eggs

Here is a classic snack or even a main course. This version isn’t fried, but it is very tasty, with a smokey spicy hit.

Scotch Eggs

Chill 1 hour 30 minutes
Total Time 1 hour 30 minutes
Servings 4 people


  • 4 eggs
  • 8 good quality pork sausages
  • ¼ tsp cayenne pepper
  • 1 tsp fresh ground black pepper
  • 1 tsp garlic granules

For the coating rub

  • 3 tbsp paprika
  • 3 tbsp light brown sugar
  • 1 tbsp chipotle powder
  • 1 tsp Maldon salt
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1 tsp hot chilli powder
  • 1 tsp ground coffee
  • ¼ tsp cayenne pepper


  1. Boil the eggs, peel and chill for 30 minutes. 

  2. Remove the sausage meat from the skins and mix thoroughly with the pepper, cayenne pepper and garlic granules. 

  3. Split the meat into 4 equal portions.

  4. Between 2 sheets of clingfilm, roll the meat into 4-6 inch discs and wrap the sausage meat around one of the boiled eggs.  

  5. Ensure you seal the meat all the way over the egg then roll the whole thing liberally in the coating rub. 

  6. Repeat with the other 3 eggs. 

  7. Place them on a plate and in the fridge to chill for at least 1 hour. 


  1. If cooking on the BGE, cook indirect at 110 deg C (230 deg F) over applewood chunks for about 1 ¼ hours until the meat is cooked and firm to the touch.

  2.  If cooking in an oven, cook at 110 deg C for 1 ¼ hours until the meat is cooked and firm to the touch. 

  3. Serve hot or cold.
